Q: How to show the pending approvals for Vendor Master on the approver's dashboard card?

Ans: Go to Company setup > General Tab > Click on edit button from right top then scroll down for "Email Dashboard Notification Settings"
Infront of "Vendor Master" master row and in column "Is Visible On Approver Dashboard" enable the toggle.
Once this toggle will be enabled then the Pending Vendors count will be visible on the Approvers dashboard as card.
